Brilliant white gold, with a fine sustained bead & mousse. Clean and fresh with a touch of autolysis, white pepper and dried herbs. Vibrant and increasingly complex. Dry with a steely lime acidity. Citrus and apple notes precede the characteristic slightly salty Hush Heath finish.

Our single vineyard and recently disgorged Blanc de Blanc is made only in exceptional vintages.
Made to reflect the purist expression of Chardonnay possible, the wine does not undergo malolactic fermentation maximising the linear precision and varietal character of the Chardonnay grape.
After extended lees ageing, the wine is disgorged over time in small parcels of 500 bottles, each time with a dosage to match the development of the wine at that time. The result is a wine with considerable complexity and ageing potential.
